Chef Tom Kung is the head chef of The Alkaff Mansion - a multi-concept, romantic and beautiful lifestyle F&B mansion in Singapore. Chef Tom’s passion for Spanish cuisine deepened as he was trained under the renowned Spanish-Italian Chef Jean Philippe Patruno for three years. Since then, he developed a deep respect for locally and regionally sourced fresh produce which is elegantly reflected in the quintessentially Spanish offerings at UNA. Over his 15-year culinary journey, Chef Tom has also helmed the kitchens of a three-Michelin-starred restaurant, L'Atelier de Joël Robuchon and turned to Spanish cuisine at Laviva Spanish Restaurant & Tapas, and UNA at 1-Rochester.
Collectively with his culinary team, he has brought UNA Restaurant to greater heights through partnerships with the Basque Culinary Institute, as well as producers and culinary associations from the Basque region.
