About Us
FOC Restaurant is the pioneer outlet of FOC Group established in 2014, igniting the rather sleepy HongKong Street with its energetic and fun Barcelona spirit. FOC, meaning “fire” in Catalan, is a buzzy, interactive experience, a vibrant Spanish affair in the heart of Singapore.
The 78-seater is located in a refurbished shop house, designed by lauded Barcelona-based design firm, Lagranja. Quintessential Catalan elements have made their way into the art and decor, such as ‘Porrons’ (traditional Spanish wine decanters) remade into lights, wall decals of the legendary ‘Sagrada Familia’, and a playful take on the ‘Correfoc’ (Catalan fire-run) with installations in the shape of giant heads. Banquette seats line the restaurant, with a prized 14-seat bar counter lit with custom-made lamps constructed from pepper grinders. The open-kitchen concept makes for a highly interactive experience, where diners can watch chefs and mixologists working side-by-side, whipping up Fine Fun Food and Drinks from Barcelona.

Chef Juanjo Carrillo. Barcelona-born Chef with over 25 years of progressive experience in the hospitality industry in Spain, London, Hong Kong and Malaysia, as well as wealth of knowledge from the European and Asian culinary scene. Having left his stint as Chef De Cuisine at The St Regis Hotels & Resorts in Kuala Lumpur last year, Chef Juanjo assumed the role of Group Executive Chef, overseeing operations for all FOC Group outlets. Chef Juanjo has worked at several Michelin-starred restaurants throughout his career. He began at Mugaritz, a fine-dining Basque restaurant with 2 Michelin Stars in Spain. He then worked as the Pastry Chef at the one Michelin-starred Hoffman Restaurant in Barcelona. After a stint as a chef-owner at Folquer Restaurant, which received the Michelin Guide Bib Gourmand, he returned to Hoffman Restaurant as the Head Chef. He later moved to Hong Kong as the Executive Chef at BirdKingdom Group, overseeing diverse restaurant concepts and cuisines. Following this international experience, he became the Head Chef at the renowned one Michelin-starred Barrafina Restaurant in London, known for its quality produce and avant-garde techniques. In 2019, Juanjo ventured back to Asia and became the Chef de Cuisine at "The Brasserie Restaurant" in the St Regis Hotel in Kuala Lumpur. Under his leadership, "The Brasserie" received accolades such as "Best Food Styling Presentation in Asia" and "Best Luxury Brasserie in Asia". In each of these establishments, Juanjo has left a lasting impression and maintained or enhanced their standing in the culinary industry.
